Vegan Tuna Salad Sandwiches

Ingredients

Inspired by the fact that many people miss fish when they become vegetarian or vegan this chickpea based salad sandwich has delicious flavor, its a quick plant-based lunch idea that you can meal prep for the week and it works for on the go vegans!

  • 1 can of chickpeas (drained and rinsed)

  • 3 Tbsp vegan mayonnaise

  • 1 Tbsp Tahini

  • 1 Tsp dijon mustard

  • 1 Tbsp maple syrup

  • Pinch of salt and pepper

  • ¼ cup of diced red onion

  • ¼ cup of diced celery

  • ¼ cup of diced pickle

  • 1 tsp capers, drained and loosely chopped

  • 1 tbsp of sunflower seeds

Cook

  • Add the chickpeas to a food processor to grind up leaving a few chunks. You can also put them in a bowl and mash them with a fork but you want to leave a few beans whole.

  • Add the vegan mayo, tahini, mustard, maple syrup, red onion, celery, pickle, capers, salt, pepper and sunflower seeds to the bowl. Mix to incorporate. Taste and you can adjust the seasonings as needed.

  • Toast your bread and add on any vegetables you like such as lettuce, onion, tomato, sprouts, avocado and lastly put a dollop of the vegan “tuna” salad.
