Plant-Based Breakfast Sandwich

One food item we constantly hear clients missing is eggs! They are a staple for breakfast and are included in so many dishes. Recently, we have discovered the company Just Eggs which has created the ultimate vegan egg substitute – its made from plants not chickens! The substitute can literally be used in anything that you would use normal eggs for: pancakes, breakfast burritos and sandwiches, eggs, omelettes, fried rice, cookies, quiche and crepes. The ingredients in Just Egg are water, mung bean protein isolate, canola oil, gums, and seasonings.

  • ½ container of Just Eggs

  • 1 teaspoon olive oil

  • 1 tablespoon onion (any color), diced

  • 1 handful of spinach

  • 2 slices tomato

  • ¼ avocado

  • ½ teaspoon salt

  • 2 tablespoons of sprouts

  • ¼ teaspoon freshly ground black pepper

  • 1 teaspoon dried thyme (or 1 tablespoon fresh)

  • ½ teaspoon dried sage

  • 1 tablespoon nutritional yeast

  • 1/2 teaspoon mustard (dijon or yellow)

  • 1 slice of Creamy Original Chao Slices, grated

  • 1 Daves Killer Bread English Muffin

Plant-based breakfast sandwich

Cook

  • Saute the onion in a pan with olive oil till slightly tender.

  • Add in the spinach and saute until it wilts.

  • Shake the bottle of Just Eggs well and then add in ½ container of Just Eggs. Scramble like an egg: use a small rubber spatula and stir occasionally.

  • Scramble all the spices in (salt, pepper, thyme and sage) and then add in the cheeses (nutritional yeast and Chao Slice) and mix everything together until the Just Egg is set.

  • Take the english muffin and toast it. Once out put the avocado on the english muffin. Take the eggs out and stack it on the english muffin as well as the tomato. Add the sprouts and put everything together as a sandwich.
