No Bake Brownies

As you may already know we love our raw food. While cooking food is great sometimes it changes the nutritional structure of the food. Some vitamins can be lost when food is cooked and the reverse some vitamins can become more readily available for your body to use. At Bare Health we encourage our clients to utilize a combination of both raw and cooked foods in their diet on a daily basis. This recipe however is raw and makes life super easy when you have a sweet tooth because you do not need to wait for anything to bake. Yes, we said it a raw vegan no bake brownie option. It is definitely a favorite dish when you bring this to the table. Enjoy with some vegan vanilla oat milk ice cream for some added deliciousness.

  • 21⁄4 cups walnuts or pecan nuts (activated)

  • 1/3 cup cacao powder

  • 1⁄4 teaspoon salt

  • 1⁄2 teaspoon cherry extracts (or any flavor)

  • 1⁄2 teaspoon vanilla extract

  • 3⁄4-1 cup dates, deseeded and chopped 1⁄4 cup cacao nibs

  • 1/3 cup raisins

Cook

  • Process 2 cups walnuts, cacao powder, salt vanilla extract and cherry extract in the food processor into powder form.

  • Add dates while processing until evenly combines

  • Add 1⁄4 cup walnut, cacao nibs and raisins to process until just enough incorporated

  • Press into lightly greased container

  • Place in fridge for a few hours or to set

  • Cut into a desirable size.

  • Enjoy and refrigerate leftovers.
