Marinara Sauce For Zucchini Noodles


This marinara sauce is totally versatile and the best part about it is that it can be used raw. Raw food maintains all of the micronutrients. You will likely have more energy, better skin, improved digestion and a reduced risk of cardiovascular disease once you get used to eating raw food .You can use this marinara on vegetable noodles or on a pizza. Sometimes I will use it over tofu as well or anything you want! It’s delicious and nutritious. Enjoy by sprinkling some nutritional yeast as well for an added cheese flavor.   • 1 cup of sundried tomatoes soaked in hot water for 30 mins

  • 1 ½ cups chopped tomatoes

  • ½ cup olive oil

  • 2 cloves garlic, crushed

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tbsp fresh basil (or 2 tsp dry)

  • 2 teaspoons fresh oregano (or 1 tsp dry)

  • 1 tsp fresh thyme (or ½ teaspoon dry)

  • 2-4 fresh zucchinis

Healthy marinara sauce for zucchini noodles


Feel free to use any type of vegetable noodle for your noodles or even regular pasta if you desire. Other vegetable noodle options are butternut squash, carrots, beets, or sweet potato. All you need is a spiralizer and will expand your raw food world. Optionally you can peel the vegetable and the spiralizer will turn then into noodles.   • Process all ingredients, except for herbs, until well incorporated but still retaining a chunky texture.

  • It’s important to soak the sun dried tomatoes in minimum water as it has a concentrated deep flavor on its own. If you add soaking water to blend, reduce the quantity of fresh tomatoes.

  • Add herbs and blend for a few seconds.

  • If a store near you already has spiralized zucchini then you can just purchase those and place your marinara over the zucchini.
