Coconut Yogurt

Ingredients

Ever wonder how to make your own vegan yogurt? Well here is our super simple coconut yogurt recipe that you can add any variety of fruit, spice, or flavor to your liking. After I make the yogurt I like to add fresh berries or sometimes cacao to give it more of a dessert appeal. One question we get a lot is why do you need a probiotic? Well the probiotic is what actually helps the yogurt ferment. You can grab any probiotic preferably that is in the fridge section at your local grocer. Sometimes these recipes take a few trial and errors to finesse them perfectly to your liking. It is always a challenge when fermenting food to properly get them to they way that you like.

  • 3 cups medium soft coconut meat from young coconuts (if unavailable use cashew nuts)

  • 2 capsules probiotics or 1⁄2 teaspoon probiotics powder

Cook

  • Blend all ingredients until smooth. Add a little water to blend if necessary. If coconut meat is too soft, add some soaked cashew nuts to adjust the consistency.

  • Transfer the mixture to a glass jar and cover the top with a towel. (Leave least 1/3 of the jar free, as the mixture will rise due to fermentation)

  • Keep in a warm place overnight.

  • The next day, transfer the mixture into a bowl and mix with a whisk until smooth.

  • Serve with honey or fruits.

  • If using cashews due to coconut being unavailable blend with 1 cup or a little more of water.
